2. Total Immersion Swimming - Total Immersion gives swim clinics around the country and they sell DVDs and books that provide very basic step-by-step instruction and drills that are intended to teach proper body positioning and stroke technique.  I think they do a good job teaching adults who have no real swimming background how to swim.  More advanced swimmers can benefit from their programs as well in that it will force them to focus on basic technique and could help to fix bad habits.  I learned how to swim by going to their clinic and reading a book that they published.  Visit their website at www.totalimmersion.net.
